Thanks for such an excellent course on the 8th in the Vienna woods, it was great. I was particularly impressed with your knowledge of the people doing the course, their requirements and the way you made us all feel part of it. It amazed me that such a diverse array of businesses could have so much in common when it comes to Hazard analysis, whether its producing fish ‘n’ chips or top class free range eggs. We came away not alone knowing what to do but, more importantly, why we do it. Well done again.
Mary Daly is well known to me both as a friend and a colleague. I have the highest regard for Mary and for her skills in her profession. Although I have not engaged her personally for her HACCP talents I have recommended her to a number of my clients who have been more than delighted with her service, knowledge and attention to detail.
I have had the pleasure of working with Mary on the Midleton Food and Drink Festival for which I was Project Manager. Mary handled the screening, placement and all hygiene requirements for the more than fifty food stalls that attended on the day, which went off without a hitch.
It is no small feat to keep fifty individual stall holders on their toes and behaving themselves. It is due to Mary’s diplomatic skills that they all did just that.
