Mary is a graduate of both UCC and DIT. She served as an Army Officer for 21 years and pioneered HACCP implementation both at home and overseas for the Defence Forces.
With a wealth of experience she established The Food Safety Company (formerly Mary Daly & Associates) in 2000. Acknowledged as a leading expert in food safety, she is the preferred professional to a number of national organisations.
Mary is a founder member and now Chairperson of The Food Safety Professionals Association (FSPA).
She leads a team of licensed trainers and auditors to the food industry throughout the island of Ireland. She is special advisor to many national bodies including Good Food Ireland and Failte Ireland.
